The Zucchini (courgette) used for our puree is a summer squash which grows to a meter in length, but which is usually harvested at less than half size. It is usually light or dark green, and generally has a similar shape to a ridged cucumber. In a culinary context it is usually cooked and presented as an accompaniment. Purees are natural products obtained from simply milling fresh vegetables by a slow and gradual production process which does not use extraneous catalyzing substances, to preserve naturalness and taste and to obtain a better consistency of the products.
